ABOUT THE ORIGIN OF THIS CACAO
We are very attached to this plantation because we saw it grow from day one, when JuanRa, co-founder of Vaicacao, encouraged his uncle Jaime and his cousin Roberto to plant theobroma cacao trees. There Finca di S. Fernando it is located in the Cordillera del Bàlsamo, in the municipality of Ateos, El Salvador. The cocoa trees grow luxuriantly and with respect for biodiversity, under a dense agroforestry roof. We are proud to let you try this unique cocoa in the world and we are deeply grateful for this important collaboration of intentions between those who grow it and us.

How it looks: in cubes. Due to its acriollada genetics, it has a light brown color (it is natural to notice whitish spots on the cocoa, especially in summer due to high temperatures - this effect is due to the crystallization of the cocoa butter).

TIPS ON HOW TO PREPARE THE MESOAMERICAN STYLE COCOA DRINK
A delicious and nutritious beverage with ours cocoa can replace coffee al mattino and contribute to health of the nervous system, the cognitive system and the heart. It also contributes to strengthen the immune system thanks to the action of flavonoids, antioxidants present in cocoa. Cocoa is also considered un mood improver, that is, it helps, - thanks to the content amino acid tryptophan - to thethe production of serotonin, hormone good mood, thus improving our emotional state. Cocoa contains neurotransmitters and molecules of bliss, as for anandamide, an endocannabinoid that is produced by our body, and which with cocoa is further stimulated, giving us a feeling of well-being and pleasure. You can drink it in the morning, during or after your meditation session, you can use it for holistic purposes, in cocoa circles to untie emotional knots, and introduce it into your diet with awareness.
FOR PREPARATION ...
Shred 15-20 g of cocoa with the help of a knife. Heat some mineral water (equivalent to a large teacup - 180-200 ml) or if you prefer, use a vegetable drink of your choice.
Pour the freshly cut cocoa into the saucepan, and gradually add the hot water (not boiling, otherwise it alters the cocoa flavor and properties); mix it until completely dissolved. Add the remaining water. If you don't want to use the saucepan, you can use a blender or a simple milk frother. The traditional drink is bitter, but if you really can't resist, you can add a date in the blender, or a little honey.
For a functional effect, an excellent solution is the use of medicinal herbs and spices, such as cinnamon, cardamom, red pepper, damiana, ashwagandha, turmeric, ginger and so on. In Mesoamerica, part of present-day Central America, cocoa is often made from a corn paste.
Serve it in your favorite cup.

- Some * people claim that there is a specific "ceremonial" dose and that it is 40 g per person. Instead, we recommend not exceeding 30 g per person. In the case of daily and continuous use, it would be more appropriate to use around 10-15 g. max. Otherwise it is good to use it every other day.
- Being pure cocoa paste, it becomes a real and very energetic food; for this reason, it should be drunk with awareness and caution, avoiding excesses, and preferring a varied and balanced diet.
- Consult your / your specialist in case of pregnancy or in case of severe heart disease.
- The stimulating and energizing effect of cocoa begins about half an hour after its intake. We recommend drinking a glass of water before and after to aid absorption and digestion.

Ho provato Atehuan dopo molto tempo con Q'Eqchi' (di cui amo la forza dei sapori e della consistenza). Come per ogni ciclo della nostra vita era arrivato il momento di cambiare e mi sono lasciata ispirare dal mix di aromi indicato in descrizione (e, a dir la verità, anche dal bellissimo colore della confezione). Sono rimasta molto soddisfatta di questo cacao più leggero ma sempre intenso, con un retrogusto zuccherato ma carico, simile al dattero. Mi ha aiutato molto, come sempre, a gestire le problematiche periodiche legate all'endometriosi, è un toccasana! Tra l'altro scoprire che è un vero e proprio unicum nel mondo del cacao lo ha reso ancora più speciale.
I was looking for ceremonial cacao for a long time. There aren’t many providers in Europe. What first got me to Vai Cacao was their story. After living in Italy for over a year, I know that whatever Italians put their minds and hands-on, it’s the best quality it can be. This was no exception!
I made the order at an unfit time, Catholic Easter and Orthodox Easter and I was surprised to get my package even before the DHL prognosis! I also got a handwritten message from Vai, which was so heartwarming.

There's a smoothness to it but it’s quite bitter. I have tried with coconut sugar but have to add a lot to make it pleasant for me to drink. Upon your recommendation, I will order Lenca next time 🙏 Thank you for your dedication and care.
